Avocado and Tomato Salad: Avocado Combine diced avocado, chopped tomatoes, red onion, cilantro, and a squeeze of lime

Black Bean and Corn Salad: Mix cooked black beans, corn kernels, diced red bell pepper, and chopped cilantro.

Grilled Shrimp Skewers with Pineapple:  Marinate shrimp in lime juice, garlic, and chili powder. Grill shrimp and pineapple chunks on skewers.

Cauliflower Rice with Black Beans and Salsa: Sauté cauliflower rice with onion and garlic.  Stir in cooked black beans and your favorite salsa.

Grilled Chicken Salad: Grill a small portion of chicken breast and slice it.  Combine with mixed greens, cherry tomatoes, cucumber, and avocado.

Lentil Soup:  Create a light lentil soup with vegetable broth, lentils, carrots, celery, and onion. Season with cumin, coriander, and chili powder.

Tuna Salad Lettuce Wraps: Combine drained tuna, chopped celery, red onion, and Greek yogurt.  Season with lemon juice, dill, and black pepper.

Quinoa Bowl: Cook a small portion of quinoa and let it cool. Toss with chopped cucumber, cherry tomatoes, red onion, and cilantro.
